  1. Get uncooked white rice
  2. Get chicken broth
  3. Prepare olive oil

  2. Add 1 can of tomatoes and all of chicken broth to rice. Stir. Cover. Let simmer for 20 minutes.
  3. Uncover and stir in 2nd can of tomatoes while rice is still hot.
  4. Season to your liking with salt and pepper. Rice should be firm, but not dry.
  5. OPTIONAL: I like to add one 14oz can of black beans at the very last that have been rinsed with warm water.
