Instructions to make Thai chicken & basil fried rice:
  1. Add ginger, garlic,spring onions,onion and red chillies. Saute until soft and the ginger and garlic release their aromas.
  2. Add the sliced chicken and saute on high heat for 5 minutes.
  3. Add the sauce mix and continue to saute for another 2-3 minutes.
  4. Add the basil leaves and saute for a minute.
  5. Add red chilli flakes.
  6. Add the rice and continue to saute, stirring briskly.
  7. Check seasoning and add salt accordingly.
  8. Remove from heat and transfer to a serving dish.
  9. Garnish with fried basil leaves and fried shallots.
  10. Serve with fish sauce with chillies(Nam Pla Prik Kheenoul).
