  2. Mix the stock cube with hot water. Then mix in the bay leaves, olive oil, salt and pepper.
  3. Place chicken on a large tray. Then pour the mixture on top.
  4. Add the butter, then sprinkle with the chilli. Crush the garlic and add to the tray.
  5. Cover well with foil and transfer the tray to the preheated oven.
  6. Roast for 1 - 1 1/2 hours. Bare in mind times will vary depending on the oven used.
  7. Remove foil about 40-50 minutes after placing in the oven. Let the chicken roast uncovered for the remainder of the time.
  8. When cooked remove from oven and let chicken rest for up to 20 minutes covered with foil.
  9. Serve with gravy and roast potatoes.
